Not quite sure what you mean - could you clarify and I will try to amend for your needs?
In your options you have a setting called "Static SEO Title" which is great for an Umbraco installation containing a single site. For our multi site installations, we often set the text that is appended to the page specific portion of the title tag in a settings field on the homepage of each site along with a specific body class, logo, etc. It would be great to be able to do this with your package so editors could see the full page title title specific to each site.

Yes, I would agree - create a new distinct uSeoPro datatype for each of your multi site root node.

That's going to be challenging if the same document type is ever shared across sites. Shared content for example.
