You could add custom variant fields to your product definition to enable it.
I tried this, and expected to see the field checked or not depending on the database value. This was not the case.

Product has build in these properties, but they are using in product, not in variant. Can we use them in variants?
You could, but there's no way of editing them by default. That's why it simpler to just add a new field as it also supports editing OOTB.
