I am using the Umbraco 6.1.6 on Windows 08 R2. I try to schedule the publish in the future, but sometimes, no matter what datetime I set, after I save it, the content node gets published within one minute.
Unfortunately this functionality is working/not working between versions. And if you check the issue tracker you can see that there are a couple of issues reported about this functionality.
For instance have a look at this one, which is closed http://issues.umbraco.org/issue/U4-3145 - Seems the stuff reported here is fixed with the release of 6.2.0 - So perhaps an upgrade could help you out if possible?
Also have a look at the folloing issues since they could also be the cause of the issues you're seeing. If so please vote them up.
6.1.6 schedule publish is sometimes crazy
