How many generations of revisions are stored by Umbraco?By clicking roll-back n-times (more than once), can I display the page as it looked before last n number of changes.

In the context menu there is a "rollback" function, which is doing what you are looking for I think.
Every time you make a change to a document, it's possible to rollback to a previous document.
