Right click on your document type and click Export (save as udt type)
In your other site, go to your document type right click on the root folder (document type) and select the import and select the file you just exported.
If another site means another umbraco instance, then you want to create a package that contains your document type(s) using the packages node (right click and select "new"), that can be found in the developer section. Then you download that package from umbraco and install it in your second umbraco instance using "Install local packages", that can be found as child of the packages node.

How do I copy a document type to another site in cluding its properties? or is there an export feature i'm not aware of?
OK Sorry Stupid me, found the export on the context menu, It wasn't loading the first time around
