If you don´t know it yet, then Umbraco, have made some Video tutorials, where they are showing the basic concepts of Umbraco. Some of those videos are free to watch. Other videos require that you buy access to Umbraco TV. http://umbraco.tv/videos
The chapter about working with Multi-language sites in Umbraco, require that you have full access to Umbraco TV
The way I would do it´s it by create the documenttypes and templates for the first site, after you have finnish the site, then I would then take a copy of the exseting site content, and add change the culture and hostnames so it point the right langagues. And remember to setup the new url in bindings in the IIS. So you only need to write the content in the rigtht langauge.
By using the method by making the sites 1:1, require that the basic design, is almost similar on all your sites, and then you can have all you sites running in the same Umbraco instans.
If you have the full access to Umbraco I think that you will get a lot of information on how to work with the Multi language sites, by see the videos about that topic on Umbraco TV
