Yes indeed they did - With the release of Umbraco 7, which was codenamed "Belle" the UI got a major overhaul.
It seems that it's some old videos you have found. You should be able to find some more up-to-date videos at http://umbraco.tv
Unfortunately there is a lot of legacy documentation floating around. But since there are still many Umbraco 4 and 6 based sites in production it's still valid to have around but it can make it difficult to find the right answers to ones issues sometimes.
umbraco change in version 7?
Did the user interface for managing features of umbraco change in version 7? The videos that i am finding show a quite different interface
i.e. the video shown here shows a different ui than what i have

i.e. under developer or settings etc.
