hmm, my guess from the error would seem to suggest there is a property on a document type, that doesn't have an associated DataType set...
... have any packages that create custom property editors been uninstalled, or not installed in the environment you get the error...
it's; hard to tell which one, might be associated with a recent change to document types on your site, what changed that made you regenerate the models?
There is a setting for ModelsBuilder that enables more detailed logging:

if you can increase the debug level, you might get a less cryptic message in the logs!
