You can't because you are actually running through the online instance of Umbraco. So database changes etc. are actually happening online.
If you need to run 100% locally, you need a windows machine (Parallels, bootcamp, virtual pc etc.).
With Parallels/VirtualPC you can run your windows machine simultaneously with MacOS, so you can still use whatever software you are used to, when working with your solution.

I have now successfully setup a local version of my Umbraco Cloud site using uaas-cli according to this guide: https://our.umbraco.org/documentation/Umbraco-Cloud/Set-Up/Working-With-UaaS-Cli/.
