The difference between Courier Express edition and the Courier Full is the following
In the Courier Express edition you can not use the API, and you can only deploy content templates and document types etc. by right click the item in the backoffice.
With the full Courier edition you get access to the API, where you can extend your deploy or script your own deploys. You can also create a revision so you can transfer content, templates and document types etc like a package.
And you can of course write your own data resolvers.

I am investigating Courier and found this page - https://umbraco.com/products/umbraco-courier/, which has a link to "Learn to extend Courier" - https://github.com/umbraco/Courier. That seems good as I assume that means you can write your own data resolvers?
