Are you getting any errors when you are trying to send the email or just nothing happens.
Can you please have a look in the log files which you can find /App_Data/Logs to see if we get some more information why the email is not been sending.
It should work with {email}
Can you please let me know which version of Umbraco CMS and Umbraco Forms that you are using.
I assume that you have added the {email} in the receiver email in the workflow the documentation shows here.
