I've probably missed something obvious: What's the easiest way to add a BCC recipient to all mails sent by Contour? If that's not possible, is there a way to add this to the workflow of each form somehow?

It says "Compatible with version 4.0.x or 4.5 using the legacy schema", we're on 4.7/4.7.1 with the new schema, but I guess it still serves as a starting point.

Well this isn't possible with the default workflows, but you'll have to create a custom workflow (should only need some minor mods if you start from the source in the contour shared sourcecode project http://our.umbraco.org/projects/developer-tools/umbraco-contour-shared-source )
You could also take a look at the contour contrib project maybe they already have a workflow that does that but I'm not sure abou that
