Am not sure about having things included, but you can change the subject through the CMS Content
In the CMS I created a textfield with the alias "clientEmailSubject" for my "form" document type and referenced it in the contour workflow subject field as "[#clientEmailSubject]"
Am sure there is a way of doing what you exactly want to do but in some way this is not far off it. I hope this helps in any way?
Dynamic email subject on multiple websites
Is it possible to have a dynamic subject with the siteName included, so the receiver knows on which website the contact form is submitted?
It's for a contactform that's used on multiple websites in a single umbraco installation.
