I am trying to hide labels of certain fields but there does not seem to be any setting to do this. I added a blank caption which got rid of the label but in the admin section when you view submitted forms the field header comes up as a - character. So is there a way to hide a label so it does not show on the form but the field name comes up in the submitting form headers.
Tom Fulton has created a label fieldtype that you can use to add a row of text, and choose whether or not to show the label's caption. I think you should take a look on this packages and see if it could be a solution for you.

http://our.umbraco.org/projects/developer-tools/contour-contrib I can see that the package didn´t have been updated since february 2013, so I don´t know if the package would work with a newer version of Contour.
And I am think that Tom would like answer if you have any questions about the label fieldtype.

Maybe you could make custom markup for the specific form that you want to hide labels for.

Then add a class on the labels. Then I thnik you could hide the labels by using some CSS,
