When creating a Workflow step such as "Post form to url" there doesn't appear to be a way to delete a field alias mapping. In addition, if you type a different name for the alias and click update the original alias name doesn't change.
One bit of clarification. When creating the workflow there is the ability to delete aliases that are created. However, there is no way to delete them once a workflow has been added and you try to go back in and edit it.

We have added it to the issue tracker and will include a fix in the next maintance release
