I can't seem to find any resources on getting my local Umbraco Instance to match Production from a content point of view.
I have read the Installation guide (http://umbraco.com/pro-downloads/courier2/Installation%20Guide.pdf) - but obviously I can't point Production to localhost to do a Courier deployment.
I think I need to know more about the purpose of the Courier transfer you are trying to do before I suggest anything but in terms of a one-off synchronisation of content for development purposes, I think you are better off just getting the DB and files from the production site or the staging/authoring site that is used to send updates to production using Courier.
For Courier to work, the source server needs access to the target server so I'm guessing you will need to make you local site publicly available on your network and then add the IP as the target site on your production site.

Alternatively there's uSync Content Edition: http://our.umbraco.org/projects/developer-tools/usynccontentedition - This is still in development but essentially provides a file based system for transfers which is a lot more flexible.
