Does Courier maintain the same nodeId's between source and target?
When using courier to move content from source to target, does it make sure the nodeId's are the same or the nodeId's will be different?
If they are different, is there any field that is gauranteed to be the same between the source and target umbraco installs?
i.e. is there a GUID field that could be used to reference the content which is gauranteed to be the same when moving content to different environments?

Even as content IDs between environments might change it's not something you'll need to spend time on. Courier knows about your site structure and will automatically restore links and other ID based references so they match the new environment.
So in short: You should not worry about node id's - Courier will sort it out for you.
