I have an umbraco backoffice with version 8.5.4 and I'm having problems with the grid layout.
I have multiple languages and have lost all content in a certain type of document. I tried to do Rollback and I couldn't get the values of the Grid Layout.
I tested it by placing content in this grid layout and doing a rollback and does not update the content to the version I selected.
Looks like the issue was fixed in a later version - perhaps create a copy of your solution and try to upgrate the version of Umbraco to at least 8.7 and see if it fixes it?
I was doing a deeper analysis and it happens when I have the document varying with the culture and the grid layout property is not varying with the culture.
Not only the Grid Layout but all properties that are not changing with the crop do not revert with the RollBack.

It sounds a very similar bug to the one in this thread:
