The main time consuming part of backup of Umbraco sites is the App_Data/cache folders.
But is there any need to backup these folders, or do they only contain images which would be recreated automatically in case of restoring a site without these folders?
You don't need to worry about backing anything in the App_Data folder. There are some files which are nice-to-have like installedpackages.config but otherwise you're good to delete it (of course I can't indemnify you or anyone else with this course of acion - this is just my belief after 7 years using Umbraco).
The exception of course is if you have a SQL CE DB in there or if you have any 3rd party tools adding stuff. Umbraco however stored everything in the DB. Thinks like the contect cache (umbraco.config) and examine indexes will be rebuilt when the application loads and finds those files missing.

They are not automatically recreated per se, but (AFAIK) ImageProcessor will generate them if they're requested.
FWIW, I never backup anything in the App_Data folder...
