I'm having trouble getting the content/list view and content/grid view in the back office to show custom properties. I've added them through the developer tools but all that show up in the content view is some kind of index that looks like this ["119"].
I've tried several data types - in this case it's a drop down menu. In every case the property value displays a ["some number"]

I don't think you are doing anything wrong - it's more down to how Umbraco is showing the value. A lot of Umbraco datatypes will just store a raw value (such as the Id in a dropdown list or the value of another page when using a picker). Unfortunately the list view just shows you the literal value, rather than the "friendly" value you might expect.
