It doesn't seem to be possible to create the meta title field from already existing fields.
Most pages needs a dynamic generated page title like:
This doesn't seem possible currently, forcing the one creating pages to enter the title field manually for every page or item created, introducing possible errors in the process.
I can see that some of my text is missing in my first post. What I meant to say was that I think many pages need to generate the title field from multiple fields and static text like:
Company name | (page Name) - (description)
Where company name and the | and - are static text while the rest is pulled from the properties.
I can see that there is already a ticket in your issues tracker about this so I'll just follow along there.

In the SEO settings for the document type, you should be able to select the fields that you want to fall back to:
Is this not working for you or is there something else missing for you here?
