Is this stuff useful for investigating the reason of this annoying issue?

If I'm not mistaken, forms data doesn't get saved to the DB but rather to folder under App_Data. Maybe you don't have correct permissions setup under that folder? I can't remember if it's the actual forms themselves or the submitted data, but I know one or the other (or both) is stored in xml in that folder.
Can't help with this extension in particular, but maybe that will help troubleshooting.
This would be in the backend. I just looked at last site I worked on where I used forms and all the form data is stored under:
\App_Plugins\UmbracoForms\Data\
Data is stored as .json files
So check to make sure your site isn't having issues writing to the App_Plugins folder. If you installed the extension on your local/dev machine and then deployed by copying the entire site, you may not have the correct permissions set on that folder.
