I think it would definitely work but would require some testing and time :)
You'd primarily want to do something that parses the grid number out (since it's an integer) and then converts it to the string name for the number (such as 8 to "eight"). You'd also need to convert all of the rows/cells from divs to table cells and it might be a bit tricky.
It would likely be done easiest by someone who is both very familiar with the way the grid works and has done modifications to the partial views before and someone who's rather familiar with the framework.

I am not sure if the Zurb Ink is the most established and stable framework but it was the one that strike me as similar markup to bootstrap (with some modifications).
There might be a better framework for table grid editor, optimal for email layout.
As I'm relatively new to the Grid and not sure if Ink is established/stable, I'll explore other available options.
