The installation process replaces /umbraco/editContent.aspx. However, uninstalling removes that file completely, which makes it impossible to update any content...
Solution (until the extension can be fixed): make a backup of the file in question (/umbraco/editContent.aspx) and put that back after uninstalling.
By the way, the extension doesn't appear to work in Umbraco 6.0.0.
