If you need a rich text editor you can add your own tab with the RTE on it. Extending uCommerce Admin. I've got RTE for long descriptions as a feature request and we will add it but probably not in within a timeframe your client will be happy with.
As for multiple images per category the easiest way to go about that would be to come up with some sort of naming convention and pick up images based on that. we're introducing category definitions for version 1.2, which will be the next release after the current one in the pipeline (1.1.1).

Our customer has two requests from us:
1. Have rich text editor on the products long description. Would that be a complicated task to do and how can that be done?
2. They would like to have more than one images per category. Not sure if this can be done easily.
