How do I edit the Product Type

I am so new at this that I don't know where to edit the Product Type?

It is still showing the default settings of software, and also the license option = variants??

Catalog Foundation Explained: Product Definitions should clear it right up.

Also there's a uCommerce.tv episode explaining the overall catalog structure
