Haven't used the package but based on the error message it looks like you are missing an assembly reference to what looks like the CORE assembly or right version of that assembly.
Make sure you have the correct assemblies referenced in your web.config. The package probably does not update the web.config file.

template web.config you could use in place of the vanilla 2.0 one (thus
removing the need to install AJAX extensions). Can't find anything like that in the base 4.0.3 install though.

OK, I've just:
Deleted the site and started again.
Replaced the standard web.config with the 3.5 version (as downloaded from CodePlex).
Reinstalled umbraco.
Reinstalled uCommerce.
Reinstalled uCommerce Store
And... the first error is fixed!
Would have been nice to know that a vanilla umbraco installation wasn't going to work with uCommerce. But maybe I missed that in the installation notes?
The demo store issues still exists on the front end though. Soren if you're out there, would be good to hear from you about that.
