We are looking at various things we can do for this, as well as providing tutorials to help get people setup. Rather than one big starter kit we are looking at producing a few add-on packages, such as the Vendr.Checkout package we are close to releasing, which gives specific functionality such that you can quickly build up your own solution from a series of minimal code based packages. As well as the checkout package, we will be producing a drop in Cart package too.
These are our plans for the future, but for now, the only thing we have is the demo store. All of the demo store code is available on GitHub though so you can clone the repo and run it locally if you need to quickly spin up a Vendr site https://github.com/vendrhub/vendr-demo-store

I imagine with the current situation there is going to be a lot of companies wanting some e-commerce sites setting up. You may have release this at a perfect time.
I am really looking forward to getting my hands dirty with Vendr.
As mentioned to Thomas the only thing we have right now is the demo store which you can access the source code for at https://github.com/vendrhub/vendr-demo-store This is a fully configured store and is setup to use the latest version of Vendr via nuget so you can absolutely use this as a starting point.
I will of course keep this thread updated when more is released.

As a question - Is there any plans for a future "Starter Site" installation a bit like your blendid example?
Would like to be able to whip up examples for our clients using a simple setup.
