I'm new to umbraco and having some problems getting my head around it. I'm hoping someone can shed some light.

i've created a doc type (p.s. the videos seem outdated and confusing), and a template. the template references /umbraco/masterpages/default.master and i cannot seem to change this (do i need to?). Also i've notice a masterpage is created for each template. So where do i put my html head tags and doc types declarations etc that i would normally put in a masterpage? Do i put it in the /umbraco/masterpages/default.master or do i put it in the masterpage that relates to my template?
