Does the "Remove At" property on the properties tab auto-magically unpublish content or is there some process I'm supposed to be running every day? I've set a remove at date for a node and it's still showing up on the site.

It "should" work automatically. The method that should be doing the unpublish stuff is called every 10 minutes or so.
However I have seen issues mentioned about this before, so you may want to report at bug, if you can't get it to work.
