As far as I know you canĀ“t do it out of the box of the Umbraco CMS. But as you probably know there is a lot of different Umbraco packages to solve things there is not in the Umbraco system out of the box.
For your question I think you could use the package Axendo Disabled Properties with the package developed by Ron Brouwer you can set permissions on documenttype field, for differentusertypes.
