I am trying to create a table using TinyMCE - I put in the number of rows I need/number of columns I need - I fill out all the necessary information but once I click on insert - it goes right back to the TinyMCE Table info but everything goes back to default which is 2 rows 2 columns and no table gets inserted. Any idea why this might be happening?
If so, in the validsettings part of /config/tinymceconfig.config I think -td is set by default, meaning that it will remove empty cells. Remove the minus and try again.

Were the table cells empty?

No worries, remember to "touch" the web config after changes to tinymce settings just to be sure your changes have taken effect
