The build-in "Image Control" does not support using a Crop data type. Our approach is to let the editor select "Aspect Ratio" if they want to adjust the image. Since the image needs to work with the same crop on both Desktop and Mobile-version our take was that this is the easiest for the editor. We will however respect the "focal point" when cropping images.
It would probably be possible to implement a Image Picker that supports using crops, the documentation for "Custom Email Controls" can be found here:
