I didn't edit the config file, that was my first step :)
The second was create a new Document Type and give it the alias uBlogsyPost, call it whatever you want i.e. NewsArticle this will be your final page which people will be able to see. A news article for example. Make sure it has a date picker type in the Generic properties and give it the alias uBlogPostDate.
Create another document type for your landing page. Call it whatever you want i.e. News landing page, but give it an alias of uBlogsyLanding.
Under the structure tab, allow child node type - [uDateFoldersy] Year Folder and allow your uBlogsyPost type (NewsArticle)
If you want that landing page to appear under your Homepage node, make sure you allow the landing page to be a child of Homepage.
Now in your main content area, under your Homepage (if that's where you want the landing page to be), create a new landing page.
Once that is created, right click it and create a [uDateFoldersy]YearFolder that should create a 2015 folder.
Once that is created, click on the landing page again, this time create a new NewsArticle - not in the 2015 folder.
Once you save this News article, it should then create month & date folder with the new article inside it.

Managed to figure out how to get it working.
