After you create a document type you can choose 1 or more templates, allowed to be applied to that document type. If you want to create a template that you can use with more than one template, go to each document type and select the template you want.
The next time you create a document type you will be have a drop downlist of templatese to choose from.
Have a look on umbraco TV they have some free videos, and if I remember correctly one of them is dedicated to document types and templates.
My problem related specifically to uSiteBuilder, but just after I posted the question I must have fixed something because it works just as I'd expect now :-\

How do I create a template for use with multiple doctypes?
