Using Umbraco 7.15.2 and Tea Commerce 3.3.1, I'm trying to add variants to a product but when I hit "save and publish" this error appears.

Hmm, sounds like the property data is too long to persist. Only way I could think this would happen is if in Umbraco the max length of the property data table has changed at all 🤔
Given it's making no reference to TC, I think it's a core issue. Might be worth looking at the DB definition for the cmsPropertyData table and see what the max length on the dataNtext it should be ntext. Failing that, it might be trying to save it into the dataNVarchar field, in which case it might be worth trying to set the data type of that to nvarchar(MAX) if it's not that already and try saving again.
If that fixes it, then it sounds like Umbraco Core may have changed which field type it saves "JSON" property editor data to.
You were totally right, nvarchar(MAX) solved the issue, the weird thing is that I checked 7.14 and 7.15.2 cmsPropertyData table and both on a fresh install have nvarchar(MAX) somehow the db I'm using was nvarchar(500).
I changed using:
ALTER TABLE dbo.cmsPropertyData
ALTER COLUMN dataNvarchar nvarchar(max)
