I'm still doing a uCommerce viability assesment for my boss. Other than some installation issues, it's looking pretty solid.
One issue I've run in to is that I can add Payment Methods ([uCommerce] > Settings > Orders > Payment Methods), but there are no options in the "Service" drop down.
Should there be something there, or have I missed something?
We don't have any default payment method implementations available. The effort to support local payment gateways is a pretty big undertaking. We're happy to help you promote your implementation to others if you go ahead and build one. Contact me at [email protected] if we'd like some documentation on creating your own implementation.

To be perfectly honest, our misunderstanding comes from the uCommerce.com features page. It mentions a few payment services by name, and seems a bit misleading. Specifically:
Support for multiple payment methods such as Paypal, DIBS, Cybersource, and others
We were really hoping to set up something as common as Paypal without any extra code. Might be worth disambiguating what "support" means :)
Are payment providers provided out of the box now?
The Features section of the website seems to suggest so:
"Payment providers for RBS WorldPay, SagePay, PayEx, Payer,
PayPal, DIBS, and ePay including support for authorization,
acquire, cancel, and refund as part of the order flow."
